Ingredients

  • 1 log goat cheese (8 oz)
  • 2 oz cream cheese (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1 baguette, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Bring goat cheese to room temperature.
  2. Slice the baguette at a 45° angle and brush with olive oil. Toast under a broiler for 1–2 minutes per side.
  3. In a bowl, combine softened goat cheese and cream cheese if using. Add olive oil, balsamic vinegar, salt, and pepper. Mix until creamy.
  4. Toss halved tomatoes with chopped basil, salt, pepper, and a drizzle of olive oil.
  5. Spread a layer of goat cheese mixture on each toasted slice, top with a spoonful of the tomato mixture, and finish with a basil leaf.
  6. For a warm version, combine the cheese and tomato mixture in an oven-safe dish and bake at 350°F (175°C) for 10–15 minutes.
