Description

Crunchy, cheesy roll-ups stuffed with roast beef and French-fried onions, served with a steaming au jus for dipping.


Ingredients

  • 4 large tortillas
  • 8 slices provolone cheese
  • 12 oz sliced roast beef
  • 1 cup French-fried onions
  • 2 tbsp olive oil
  • 1 cup beef consommé
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Assemble the fill: Lay a tortilla flat. Place 2 slices of provolone cheese over half, followed by 3 oz roast beef and a handful of French-fried onions. Brush the inside tortilla edge lightly with olive oil.
  3. Roll the tortilla tightly, pressing the oiled edge to seal. Place seam-side down on the baking sheet.
  4. Brush tops and sides lightly with remaining olive oil.
  5. Bake for 8-10 minutes until golden brown and cheese is bubbling.
  6. Make the au jus by combining beef consommé, water, Worcestershire, soy, onion powder, and garlic powder in a saucepan. Heat over medium for 3-4 minutes.
  7. Let baked roll-ups rest for 2 minutes, then slice into halves or thirds for serving.
  8. Serve immediately with warm au jus.

Notes

Optional add-ins include caramelized onions, roasted peppers, or horseradish sauce for extra flavor.
