Description
Crunchy, cheesy roll-ups stuffed with roast beef and French-fried onions, served with a steaming au jus for dipping.

- 4 large tortillas
- 8 slices provolone cheese
- 12 oz sliced roast beef
- 1 cup French-fried onions
- 2 tbsp olive oil
- 1 cup beef consommé
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tsp onion powder
- 1 tsp garlic powder
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Assemble the fill: Lay a tortilla flat. Place 2 slices of provolone cheese over half, followed by 3 oz roast beef and a handful of French-fried onions. Brush the inside tortilla edge lightly with olive oil.
- Roll the tortilla tightly, pressing the oiled edge to seal. Place seam-side down on the baking sheet.
- Brush tops and sides lightly with remaining olive oil.
- Bake for 8-10 minutes until golden brown and cheese is bubbling.
- Make the au jus by combining beef consommé, water, Worcestershire, soy, onion powder, and garlic powder in a saucepan. Heat over medium for 3-4 minutes.
- Let baked roll-ups rest for 2 minutes, then slice into halves or thirds for serving.
- Serve immediately with warm au jus.
Notes
Optional add-ins include caramelized onions, roasted peppers, or horseradish sauce for extra flavor.
