Description

A hearty and delicious soup featuring savory meatballs, white beans, and a rich tomato base, perfect for comforting meals.


Ingredients

  • 1 lb ground beef or turkey
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine all meatball ingredients in a bowl and form meatballs.
  2. Brown meatballs in a large pot, then set aside.
  3. Sauté onion, carrots, and celery until softened.
  4. Add tomatoes, beans, and broth. Stir in herbs.
  5. Return meatballs to pot and simmer for 15-20 minutes.
  6. Serve hot, garnished with parsley.

Notes

This soup can be made vegetarian by substituting the meat with lentils or beans. For a dairy-free version, omit the Parmesan cheese.
