- 1 lb ground beef or turkey
- 1 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 4 cups chicken or vegetable broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried oregano
- 1 teaspoon basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Combine all meatball ingredients in a bowl and form meatballs.
- Brown meatballs in a large pot, then set aside.
- Sauté onion, carrots, and celery until softened.
- Add tomatoes, beans, and broth. Stir in herbs.
- Return meatballs to pot and simmer for 15-20 minutes.
- Serve hot, garnished with parsley.
Notes
This soup can be made vegetarian by substituting the meat with lentils or beans. For a dairy-free version, omit the Parmesan cheese.
