Description

A cozy and flavorful Rotisserie Chicken Mushroom Soup that’s quick to prepare and perfect for busy weeknights.


Ingredients

  • 1 rotisserie chicken, shredded
  • 8 oz mushrooms, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups celery, diced
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup parsley, chopped

Instructions

  1. Prep your ingredients by dicing onions, mincing garlic, and slicing mushrooms, celery, and carrots (5 minutes).
  2. In a large pot, heat olive oil over medium heat, add onions and garlic, and cook until translucent (3-5 minutes).
  3. Add mushrooms, carrots, and celery, and cook until softened (about 5 minutes).
  4. Pour in chicken broth, thyme, salt, and black pepper; bring to a boil, then simmer for 15 minutes.
  5. Stir in shredded chicken and parsley, heat through for 5 minutes.
  6. Serve hot, garnished with extra parsley if desired.

Notes

Store leftovers in airtight containers for up to 4 days or freeze for up to 3 months. Reheat gently on the stovetop.
