- 1 rotisserie chicken, shredded
- 8 oz mushrooms, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups carrots, sliced
- 2 cups celery, diced
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1/4 cup parsley, chopped
Instructions
- Prep your ingredients by dicing onions, mincing garlic, and slicing mushrooms, celery, and carrots (5 minutes).
- In a large pot, heat olive oil over medium heat, add onions and garlic, and cook until translucent (3-5 minutes).
- Add mushrooms, carrots, and celery, and cook until softened (about 5 minutes).
- Pour in chicken broth, thyme, salt, and black pepper; bring to a boil, then simmer for 15 minutes.
- Stir in shredded chicken and parsley, heat through for 5 minutes.
- Serve hot, garnished with extra parsley if desired.
Notes
Store leftovers in airtight containers for up to 4 days or freeze for up to 3 months. Reheat gently on the stovetop.
