Description

A quick and easy meal featuring roasted chicken sausages with vibrant vegetables, mushrooms, and a delicious herb gravy.


Ingredients

  • Chicken sausages
  • Mixed vegetables (bell peppers, carrots, zucchini)
  • Mushrooms (button or cremini)
  • Olive oil
  • Salt
  • Pepper
  • Fresh thyme
  • Fresh parsley
  • Garlic (optional)
  • Flour (for gravy)
  • Chicken broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine chicken sausages, mixed vegetables, and sliced mushrooms.
  3. Drizzle generously with olive oil and season with salt, pepper, and minced garlic. Toss everything together until well coated.
  4. Roast in the oven for about 25-30 minutes, or until the sausages are cooked through and the vegetables are tender.
  5. In a saucepan, combine chicken broth and thyme, heating over medium-low. In a separate pan, create a roux by whisking flour with a bit of olive oil, then gradually whisk in the broth mixture and simmer until thickened.
  6. Serve the roasted sausages and vegetables topped with the herb gravy.
