Ingredients
- Chicken sausages
- Mixed vegetables (bell peppers, carrots, zucchini)
- Mushrooms (button or cremini)
- Olive oil
- Salt
- Pepper
- Fresh thyme
- Fresh parsley
- Garlic (optional)
- Flour (for gravy)
- Chicken broth
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, combine chicken sausages, mixed vegetables, and sliced mushrooms.
- Drizzle generously with olive oil and season with salt, pepper, and minced garlic. Toss everything together until well coated.
- Roast in the oven for about 25-30 minutes, or until the sausages are cooked through and the vegetables are tender.
- In a saucepan, combine chicken broth and thyme, heating over medium-low. In a separate pan, create a roux by whisking flour with a bit of olive oil, then gradually whisk in the broth mixture and simmer until thickened.
- Serve the roasted sausages and vegetables topped with the herb gravy.
