- 2 medium beets
- 2 medium sweet potatoes
- 3 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube beets and sweet potatoes into 1-inch pieces.
- In a large bowl, toss vegetables with olive oil, salt, and pepper until coated.
- Spread on a baking sheet in a single layer.
- Roast for 25-30 minutes, stirring halfway, until tender and crispy.
- Remove from the oven, let cool slightly, and sprinkle with feta and cilantro before serving.

Wearing gloves while handling beets can prevent staining your hands.
