Description

A vibrant and healthy dish combining roasted beets, sweet potatoes, feta cheese, and fresh cilantro.


Ingredients

  • 2 medium beets
  • 2 medium sweet potatoes
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube beets and sweet potatoes into 1-inch pieces.
  3. In a large bowl, toss vegetables with olive oil, salt, and pepper until coated.
  4. Spread on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway, until tender and crispy.
  6. Remove from the oven, let cool slightly, and sprinkle with feta and cilantro before serving.

Notes

Wearing gloves while handling beets can prevent staining your hands.
