Ingredients

- 2 tbsp olive oil
- Salt & pepper to taste
- 4 oz blue cheese (crumbled)
- 2 medium beets (roasted and sliced)
- 1 ripe pear (thinly sliced)
- Balsamic glaze
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap beets in aluminum foil and roast for about 45 minutes until tender. Let cool, peel, and slice.
- On a serving platter, layer slices of roasted beet, crumbled blue cheese, and pear slices.
- Drizzle with olive oil and balsamic glaze.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
For a vegan version, substitute blue cheese with cashew cream. Best enjoyed fresh, but components can be stored separately.
