Description

A sophisticated appetizer combining earthy roasted beets, rich blue cheese, and sweet pears, drizzled with balsamic glaze.


Ingredients

Scale
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 4 oz blue cheese (crumbled)
  • 2 medium beets (roasted and sliced)
  • 1 ripe pear (thinly sliced)
  • Balsamic glaze

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap beets in aluminum foil and roast for about 45 minutes until tender. Let cool, peel, and slice.
  3. On a serving platter, layer slices of roasted beet, crumbled blue cheese, and pear slices.
  4. Drizzle with olive oil and balsamic glaze.
  5. Season with salt and pepper to taste.
  6. Serve immediately.

Notes

For a vegan version, substitute blue cheese with cashew cream. Best enjoyed fresh, but components can be stored separately.
