- 1 head of cauliflower, cleaned
- 2 tablespoons olive oil
- Salt, to taste
- 1 cup mushrooms, sliced (button or cremini)
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup Gruyère cheese, grated
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- Black pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Drizzle the cauliflower with olive oil and sprinkle with salt.
- Roast the cauliflower in the oven for 25-30 minutes, or until golden brown and tender.
- While the cauliflower roasts, heat a skillet over medium heat and sauté mushrooms and garlic until tender, about 5 minutes.
- Add heavy cream to the skillet and bring to a simmer; stir in Gruyère cheese until melted and smooth. Season with thyme, salt, and pepper.
- Once the cauliflower is done, remove it from the oven and top it generously with the mushroom and cheese sauce. Serve warm.
Notes
For added richness, blend the sauce for a smoother texture or sprinkle with toasted breadcrumbs before serving.
