A visually stunning red velvet sponge rolled with silky cream and bright berry filling, perfect for holidays and family gatherings.

- 4 eggs
- 1 cup sugar
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup vegetable oil
- 1 tbsp red food coloring
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 cup mascarpone cheese (optional)
- 1 cup mixed berries (strawberries, raspberries, blueberries)
- 1 tbsp lemon juice
Instructions
- Prepare the berry filling by cooking berries, sugar, and lemon in a saucepan over medium heat for 5–7 minutes until thick.
- Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- Whip eggs and sugar until pale and thick for about 5 minutes.
- Sift and gently fold in dry ingredients into the egg mixture.
- Add vanilla, oil, and food coloring, mixing until smooth.
- Spread mixture into the prepared pan and bake for 10–12 minutes.
- Cool the sponge slightly, then flip onto a powdered sugar-dusted towel and roll with the towel inside.
- Prepare the whipped cream by beating cream, powdered sugar, and mascarpone until stiff peaks form.
- Unroll sponge, spread whipped cream and berry filling, then roll tightly without the towel.
- Decorate with rosettes of cream, fresh berries, and powdered sugar before chilling for 30 minutes.
Notes
Keep cake covered in the refrigerator for up to 3 days or freeze slices for up to 1 month. Chill before serving for the best texture.
