Description

A visually stunning red velvet sponge rolled with silky cream and bright berry filling, perfect for holidays and family gatherings.


Ingredients

Scale
  • 4 eggs
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup vegetable oil
  • 1 tbsp red food coloring
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 cup mascarpone cheese (optional)
  • 1 cup mixed berries (strawberries, raspberries, blueberries)
  • 1 tbsp lemon juice

Instructions

  1. Prepare the berry filling by cooking berries, sugar, and lemon in a saucepan over medium heat for 5–7 minutes until thick.
  2. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  3. Whip eggs and sugar until pale and thick for about 5 minutes.
  4. Sift and gently fold in dry ingredients into the egg mixture.
  5. Add vanilla, oil, and food coloring, mixing until smooth.
  6. Spread mixture into the prepared pan and bake for 10–12 minutes.
  7. Cool the sponge slightly, then flip onto a powdered sugar-dusted towel and roll with the towel inside.
  8. Prepare the whipped cream by beating cream, powdered sugar, and mascarpone until stiff peaks form.
  9. Unroll sponge, spread whipped cream and berry filling, then roll tightly without the towel.
  10. Decorate with rosettes of cream, fresh berries, and powdered sugar before chilling for 30 minutes.

Notes

Keep cake covered in the refrigerator for up to 3 days or freeze slices for up to 1 month. Chill before serving for the best texture.
