- 2 cups almond flour
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup raspberry jam
- 1 teaspoon almond extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy, about 2-3 minutes.
- Mix in the almond extract until well combined.
- In a separate bowl, whisk together the almond flour and salt. Gradually add this mixture to the butter mixture, stirring until a dough forms.
- Scoop out a tablespoon of dough and flatten it slightly in your palm. Place about half a teaspoon of raspberry jam in the center, then fold the dough over to encase the jam completely. Roll it into a ball and place it on the prepared baking sheet.
- Bake the cookies in the preheated oven for about 12-15 minutes, or until they are set and the edges are lightly golden.
- Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then, transfer them to a wire rack to cool completely. Once cool, dust them generously with powdered sugar.
