Description

These Raspberry Filled Almond Snowball Cookies combine a nutty almond dough with a luscious raspberry filling, creating a delightful treat that melts in your mouth.

Ingredients

Scale
  • 2 cups almond flour
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup raspberry jam
  • 1 teaspoon almond extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy, about 2-3 minutes.
  3. Mix in the almond extract until well combined.
  4. In a separate bowl, whisk together the almond flour and salt. Gradually add this mixture to the butter mixture, stirring until a dough forms.
  5. Scoop out a tablespoon of dough and flatten it slightly in your palm. Place about half a teaspoon of raspberry jam in the center, then fold the dough over to encase the jam completely. Roll it into a ball and place it on the prepared baking sheet.
  6. Bake the cookies in the preheated oven for about 12-15 minutes, or until they are set and the edges are lightly golden.
  7. Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then, transfer them to a wire rack to cool completely. Once cool, dust them generously with powdered sugar.
