Description

Rainbow Bundt Cake with Hidden Colors is a delightful and visually stunning dessert featuring vibrant rainbow-colored batter hidden inside a moist and fluffy white bundt cake.


Ingredients

  • 260g all purpose flour
  • 100g cake flour
  • 2 tsps baking powder
  • 1 tsp fine sea salt
  • 226g unsalted butter, softened
  • 75g coconut oil
  • 400g fine, granulated sugar
  • 2 tsps pure vanilla extract
  • 1 tsp imitation vanilla
  • 4 large egg whites
  • 240g buttermilk
  • Gel food coloring: red, yellow, green, blue, purple

Instructions

  1. Preheat your oven to 350°F (175°C). Thoroughly butter and flour a large bundt pan to prevent sticking.
  2. Sift together the all-purpose flour and cake flour into a bowl and set aside.
  3. In a large mixing bowl, cream together the softened butter, coconut oil, granulated sugar, sea salt, pure vanilla extract, imitation vanilla, and baking powder for 5 minutes until light and fluffy.
  4. Add the egg whites one at a time with the mixer running on medium speed.
  5. Add the sifted flour mixture and drizzle in the buttermilk. Mix until combined.
  6. Divide the batter into 5 bowls, adding gel food coloring to each and stirring gently.
  7. Pour more than 2/3 of the remaining plain batter into the bundt pan.
  8. Use piping bags for each colored batter to create a circular space in the white batter.
  9. Pipe the colored batters into the moat, smoothing each layer.
  10. Spoon remaining plain batter on top and smooth gently.
  11. Bake for about 45 minutes, checking at 40 minutes for doneness.
  12. Cool in the pan for 15 minutes before inverting onto a cooling rack.
