Ingredients

  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp pumpkin spice
  • 1/2 cup butter, melted
  • 1/2 cup powdered sugar
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine 1 cup of all-purpose flour, 1 cup of sugar, and 1 tsp of baking powder. Mix well.
  3. In another bowl, whisk together 1 large egg, 1 cup of pumpkin puree, 1/2 cup of melted butter, and 1 tsp of pumpkin spice until smooth.
  4. Gradually incorporate the wet mixture into the dry ingredients, stirring until just combined.
  5. Pour the combined mixture into the greased baking dish and spread evenly.
  6. In a separate bowl, beat 3 large eggs with 1/2 cup powdered sugar and 1/4 cup milk until smooth, then pour this mixture over the pumpkin layer.
  7. Bake for 40-45 minutes, or until set in the center.
  8. Let the cake cool in the dish for about 10-15 minutes before serving.
