Description

Irresistibly crispy on the outside and pillowy on the inside, these Potato Croquettes are a game-changing snack or side dish, featuring cheesy, bacon-studded mashed potatoes with a crispy crust.


Ingredients

  • 3 pounds russet potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 6 strips cooked bacon, chopped
  • 1/2 cup shredded provolone cheese
  • 1/2 cup sharp cheddar cheese
  • 2 tbsp chopped parsley
  • Flour for coating
  • 2 beaten eggs for coating
  • Panko breadcrumbs for coating
  • Vegetable oil for frying
  • 1 cup sour cream (for dip)
  • 1 tsp lemon juice (for dip)
  • 1/2 tsp smoked paprika (for dip)

Instructions

  1. Boil the cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash until smooth.
  2. In a large mixing bowl, combine the cooled mashed potatoes with butter, milk, garlic powder, sea salt, and black pepper.
  3. Fold in the chopped bacon, provolone cheese, sharp cheddar cheese, and parsley.
  4. Scoop the mixture into balls or logs about 2-3 inches in size and chill for 30 minutes on a parchment-lined sheet.
  5. Set up three stations: one with flour, one with beaten eggs, and one with panko breadcrumbs. Coat each croquette in flour, dip in egg, and roll in panko.
  6. Heat oil in a skillet to 350°F (175°C). Fry the croquettes for 3-4 minutes per side or until golden brown. Drain on paper towels.
  7. For the dip, mix sour cream, lemon juice, smoked paprika, and season with salt and pepper. Fold in chopped bacon and parsley.

Notes

For a vegetarian version, omit bacon and consider adding roasted mushrooms or caramelized onions for depth. You can also bake or air-fry the croquettes for a lower-oil option.
