Ingredients

  • 2 lbs pork shoulder
  • 6 tomatillos, husked and chopped
  • 2 green chiles, chopped
  • 1 onion, chopped
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Oil for sautéing
  • 46 cups water or broth
  • Optional: sliced radishes and avocado for garnish

Instructions

  1. Season the pork shoulder with salt and pepper.
  2. In a large pot, heat oil over medium heat and sauté chopped onions until translucent.
  3. Add chopped tomatillos and green chiles; cook until softened for about 5-7 minutes.
  4. Pour in enough water or broth to cover ingredients by an inch. Bring to a boil, then reduce heat and simmer for 1.5 hours until the pork is tender.
  5. Stir in chopped cilantro and lime juice, then simmer for an additional 10 minutes.
