- 2 lbs pork shoulder
- 6 tomatillos, husked and chopped
- 2 green chiles, chopped
- 1 onion, chopped
- 1/2 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- Oil for sautéing
- 4–6 cups water or broth
- Optional: sliced radishes and avocado for garnish
Instructions
- Season the pork shoulder with salt and pepper.
- In a large pot, heat oil over medium heat and sauté chopped onions until translucent.
- Add chopped tomatillos and green chiles; cook until softened for about 5-7 minutes.
- Pour in enough water or broth to cover ingredients by an inch. Bring to a boil, then reduce heat and simmer for 1.5 hours until the pork is tender.
- Stir in chopped cilantro and lime juice, then simmer for an additional 10 minutes.
Notes
