Description

Delightful cookies combining the classic flavors of pineapple upside-down cake with a soft, buttery sugar cookie base.


Ingredients

  • 1/3 cup brown sugar
  • 3 tablespoons melted butter
  • 12 maraschino cherries, halved
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking sheet.
  2. In a mixing bowl, combine brown sugar and melted butter.
  3. Add in the egg and vanilla extract, mixing well.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture until combined.
  6. Drop spoonfuls of the dough onto the prepared baking sheet.
  7. Press a halved maraschino cherry into the center of each cookie.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let cool before serving.
