Description

Delightful cookies that combine the classic flavors of pineapple upside-down cake in an easy, bite-sized form.

Ingredients

Scale
  • 1/3 cup brown sugar
  • 3 tablespoons melted butter
  • 1 cup all-purpose flour
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup crushed pineapple (drained)
  • 12 maraschino cherries, halved

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking sheet.
  2. Mix brown sugar and melted butter until well combined.
  3. Stir in flour, baking powder, salt, granulated sugar, egg, vanilla extract, and crushed pineapple.
  4. Drop spoonfuls of the dough onto the baking sheet and place a halved cherry on top.
  5. Bake for 10-12 minutes until edges are golden.
  6. Cool before serving.

Notes

For a dairy-free option, substitute coconut oil for butter. Ensure to drain the crushed pineapple well to avoid excess moisture.
