A fast, flavorful, and family-friendly dish combining marinated chicken, tangy pineapple salsa, and perfectly cooked rice.

- 4 chicken breasts
- 1 can pineapple chunks (or fresh pineapple)
- 1 cup jasmine rice
- 1 jalapeño, diced
- 1 lime, juiced and zested
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- 1 avocado, diced (for serving)
Instructions
- Trim and pound chicken; mix marinade of lime juice, zest, garlic, honey, cumin, coriander, salt, and pepper.
- Marinate chicken for at least 30 minutes.
- While chicken is marinating, cook jasmine rice as per package instructions.
- Grill the chicken on medium-high heat for 4-6 minutes per side until cooked through.
- Optionally, grill pineapple for 2-3 minutes per side.
- Make pineapple salsa by combining diced pineapple, jalapeño, cilantro, and lime juice.
- Slice chicken and serve over rice; top with pineapple salsa and diced avocado.

Notes
Adjust the spice level by modifying the amount of jalapeño in the salsa. This dish is customizable with rice types and can be adapted with different proteins.
