Ingredients

- 1 lb ground beef (80/20 or leaner)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 3 cups beef broth
- 8 oz pasta (penne or elbow)
- 1 cup shredded cheddar cheese
- 1 tablespoon cream or milk (optional)
- Salt and pepper to taste
- 1 teaspoon vinegar or a squeeze of lemon (optional)
Instructions
- Heat a large skillet over medium-high heat and add ground beef; brown the meat for 5-7 minutes.
- Push the meat to one side, add chopped onion, sauté until translucent, then add garlic and cook for 30 seconds.
- Deglaze the pan with a splash of broth or tomato juice.
- Add diced tomatoes, broth, and pasta; bring to a simmer and cover. Reduce heat to medium-low and cook for 12-15 minutes until pasta is al dente.
- Remove from heat and stir in cheese and cream or milk if desired. Adjust seasoning with salt, pepper, and add a splash of acid.
- Serve with fresh herbs if desired.

Use leaner meat for a lower fat option and experiment with different cheese types for varied flavors.
