Description

Quick, healthy, and customizable mini ratatouille tartlets, perfect for dinner or parties.


Ingredients

Scale
  • 1 package mini tart shells
  • 1 eggplant, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Fresh basil, for garnish
  • Salt and pepper, to taste
  • Optional: grated Parmesan or goat cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Blind bake the tart shells for 10-15 minutes until golden brown.
  3. In a skillet, heat olive oil over medium heat and sauté eggplant, zucchini, and bell pepper for 8-10 minutes until tender. Season with salt, pepper, and thyme.
  4. Fill each tart shell with the sautéed vegetables and sprinkle with fresh basil.
  5. Return to the oven for another 5-7 minutes.
  6. Let cool for 3-5 minutes, garnish, and serve warm.

Notes

Serve with a light drizzle of balsamic reduction or high-quality olive oil for added flavor.
