Ingredients

- 1 package mini tart shells
- 1 eggplant, thinly sliced
- 1 zucchini, thinly sliced
- 1 bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Fresh basil, for garnish
- Salt and pepper, to taste
- Optional: grated Parmesan or goat cheese
Instructions
- Preheat oven to 400°F (200°C).
- Blind bake the tart shells for 10-15 minutes until golden brown.
- In a skillet, heat olive oil over medium heat and sauté eggplant, zucchini, and bell pepper for 8-10 minutes until tender. Season with salt, pepper, and thyme.
- Fill each tart shell with the sautéed vegetables and sprinkle with fresh basil.
- Return to the oven for another 5-7 minutes.
- Let cool for 3-5 minutes, garnish, and serve warm.
Notes
Serve with a light drizzle of balsamic reduction or high-quality olive oil for added flavor.
