- 1 sleeve graham crackers, crushed
- 3 tbsp melted butter
- 1/4 cup sugar
- 1/2 tsp cinnamon
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 2 large eggs
- 1 cup heavy cream
- 1/4 cup powdered sugar
- Chocolate chips for ganache
- Cranberries for garnish
Instructions
- Preheat oven to 325°F (160°C) and prepare muffin pan with parchment liners.
- Mix graham cracker crumbs, melted butter, sugar, and cinnamon until sandy. Press 2–3 tbsp into each mold.
- Bake crusts for 6–8 minutes and let cool.
- Beat cream cheese until smooth, add sugar, vanilla, sour cream, and mix until silky. Incorporate eggs one at a time gently.
- Spoon filling into crusts and bake for 18–22 minutes, until slightly jiggly. Cool at room temp, then chill for at least 3 hours.
- For chocolate ganache, heat cream, pour over chocolate chips, and stir until smooth. Spoon over cooled cheesecakes.
- Beat heavy cream with powdered sugar until stiff peaks form and pipe into tree shapes on each cheesecake.
- Garnish with cranberries, cinnamon sticks, and a dusting of powdered sugar. Chill again before serving.
Notes
For a dairy-free ganache, consider using coconut cream. Adjust the consistency as needed for the filling and ganache.
