Description

Delightfully festive mini cheesecakes that double as holiday decor, perfect for any festive gathering.


Ingredients

  • 1 sleeve graham crackers, crushed
  • 3 tbsp melted butter
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Chocolate chips for ganache
  • Cranberries for garnish

Instructions

  1. Preheat oven to 325°F (160°C) and prepare muffin pan with parchment liners.
  2. Mix graham cracker crumbs, melted butter, sugar, and cinnamon until sandy. Press 2–3 tbsp into each mold.
  3. Bake crusts for 6–8 minutes and let cool.
  4. Beat cream cheese until smooth, add sugar, vanilla, sour cream, and mix until silky. Incorporate eggs one at a time gently.
  5. Spoon filling into crusts and bake for 18–22 minutes, until slightly jiggly. Cool at room temp, then chill for at least 3 hours.
  6. For chocolate ganache, heat cream, pour over chocolate chips, and stir until smooth. Spoon over cooled cheesecakes.
  7. Beat heavy cream with powdered sugar until stiff peaks form and pipe into tree shapes on each cheesecake.
  8. Garnish with cranberries, cinnamon sticks, and a dusting of powdered sugar. Chill again before serving.

Notes

For a dairy-free ganache, consider using coconut cream. Adjust the consistency as needed for the filling and ganache.
