Description

A refreshing and flavorful twist on traditional Mexican street corn, this coleslaw combines crisp cabbage, sweet corn, and a creamy dressing that’s perfect for any gathering.

Ingredients

Scale
  • 4 cups green cabbage, shredded
  • 1 cup carrots, shredded
  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded cabbage, carrots, and corn.
  2. In a separate bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper.
  3. Pour the dressing over the cabbage mixture and toss until well coated.
  4. Add the chopped cilantro and mix gently.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For added flavor, adjust the lime juice and chili powder to taste. This coleslaw tastes even better after chilling as the flavors meld together.
