- 4 lbs short ribs
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup heavy cream
- 2 tablespoons chopped fresh herbs (thyme, rosemary, parsley)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Season short ribs with salt and pepper. Brown in olive oil in a large oven-safe pot.
- Sauté onion until soft, add garlic.
- Add broth and short ribs, simmer, then cover and transfer to the oven for 2 to 2.5 hours.
- Stir in cream and herbs, simmer for 10 to 15 minutes.
- Serve over mashed potatoes or polenta.
Notes
For a dairy-free version, substitute heavy cream with coconut cream or cashew cream.
