Ingredients

- 3–4 pounds beef chuck roast
- 2 tablespoons gochujang
- 1 tablespoon soy sauce
- 2 tablespoons brown sugar
- 4 garlic cloves, minced
- 1 onion, chopped
- 3 carrots, sliced
- 2 cups beef broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Preheat the oven to 300°F (150°C).
- In a small bowl, mix the gochujang, soy sauce, brown sugar, and minced garlic.
- Season the roast with salt and pepper.
- In a large Dutch oven, heat the vegetable oil and sear the roast on all sides until browned.
- Sauté the onions and carrots, then return the roast to the pot and add the beef broth.
- Cover the pot and bake for 3-4 hours until the meat is tender and easily forked.
- Serve with vegetables and sauce over the top.
Notes
For best results, let the roast marinate for at least 15 minutes before cooking. You can adjust the amount of gochujang to suit your spice preference.
