- 2 tablespoons maple syrup
- 1 cup ricotta cheese
- 2 tablespoons butter

- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrot sticks with olive oil, maple syrup, salt, and pepper.
- Spread on a baking sheet; roast for 20-25 minutes or until tender and caramelized.
- In a small saucepan, melt the butter; stir in cinnamon and nutmeg.
- Top roasted carrots with ricotta and drizzle with spiced butter.
- Garnish with parsley and serve warm.
Notes
For a dairy-free option, substitute ricotta with a dairy-free cheese and use coconut oil instead of butter.
