Description

A quick and delicious side dish featuring roasted carrots topped with creamy ricotta and drizzled with spiced butter.


Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 cup ricotta cheese
  • 2 tablespoons butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrot sticks with olive oil, maple syrup, salt, and pepper.
  3. Spread on a baking sheet; roast for 20-25 minutes or until tender and caramelized.
  4. In a small saucepan, melt the butter; stir in cinnamon and nutmeg.
  5. Top roasted carrots with ricotta and drizzle with spiced butter.
  6. Garnish with parsley and serve warm.

Notes

For a dairy-free option, substitute ricotta with a dairy-free cheese and use coconut oil instead of butter.
