  • 2 packages cream cheese (8 oz each, at room temperature.)
  • 1 can Sweetened Condensed Milk (Adds sweetness and creamy texture.)
  • 2 large eggs (Helps set the cheesecake.)
  • 0.33 cups lemon juice or lime juice (Balances sweetness.)
  • 1 teaspoon vanilla extract or coconut extract (Adds depth of flavor.)

Instructions

  1. Preheat your oven to 350°F.
  2. Grease and line an 8×8-inch baking pan with parchment paper.
  3. Blend the mango until smooth, then cook with cornstarch until thickened.
  4. Combine crushed cookies with melted butter and press into the pan.
  5. Beat cream cheese until fluffy, then mix in sweetened condensed milk until smooth.
  6. Whisk together mango purée with ¼ cup of cream cheese filling.
  7. Pour remaining cream cheese mixture over crust and spread evenly.
