Description

A hearty and healthy low-carb bacon cheeseburger casserole that combines classic flavors into a quick, easy, and budget-friendly meal.


Ingredients

  • 1 lb ground beef
  • 4 slices bacon
  • 3 eggs
  • 8 oz cream cheese
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup heavy cream
  • 1 tbsp mustard
  • Optional: ketchup
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Optional: chopped bell peppers or mushrooms

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, then crumble and set aside (10 minutes).
  2. Brown the ground beef with onions and garlic in the remaining bacon grease until cooked through (7-10 minutes).
  3. Mix in the cream cheese until melted and well combined (5 minutes).
  4. In a bowl, whisk together the eggs, heavy cream, mustard, and optional ketchup, then stir in half of the cheddar and mozzarella (5 minutes).
  5. Spread the beef layer evenly in a greased 9×13 inch baking dish and pour the egg mixture on top, layering with remaining cheese (5 minutes).
  6. Bake in a preheated oven at 350°F (175°C) until the center is set and the top is golden (25-30 minutes).
  7. Allow to cool slightly, then slice and serve (5 minutes).

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave. Consider pairing with a side salad or low-carb bread for a complete meal.
