- 2 lbs beef chuck, cut into cubes
- 1 can (14 oz) coconut milk
- 2 stalks lemongrass, trimmed and crushed
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 inches ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon fish sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
- Brown beef cubes, seasoning with salt and pepper.
- Add lemongrass, mushrooms, soy sauce, brown sugar, and coconut milk. Stir well.
- Bring to a simmer, reduce heat, cover, and braise for 1.5-2 hours.
- Adjust seasoning, serve hot, and garnish with cilantro.
Notes
Letting the beef braise for a longer time enhances the flavors.
