Description

A flavorful dish combining tender beef with aromatic lemongrass and creamy coconut milk, perfect for any weeknight dinner.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 can (14 oz) coconut milk
  • 2 stalks lemongrass, trimmed and crushed
  • 8 oz mushrooms, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 inches ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon fish sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
  2. Brown beef cubes, seasoning with salt and pepper.
  3. Add lemongrass, mushrooms, soy sauce, brown sugar, and coconut milk. Stir well.
  4. Bring to a simmer, reduce heat, cover, and braise for 1.5-2 hours.
  5. Adjust seasoning, serve hot, and garnish with cilantro.

Notes

Letting the beef braise for a longer time enhances the flavors.
