Description

An incredibly delicious Lemon Pecorino Crusted Chicken that’s quick, easy, and healthy, perfect for family dinners.


Ingredients

Scale
  • 4 Chicken Breasts
  • 1 cup Pecorino Cheese, grated
  • 1 cup Breadcrumbs
  • 2 Lemons, zest and juice
  • 2 tablespoons Olive Oil
  • Salt
  • Pepper
  • 1/2 cup Heavy Cream (optional)
  • Fresh Parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine pecorino cheese, breadcrumbs, lemon zest, salt, and pepper.
  3. Brush each chicken breast with olive oil and coat with the breadcrumb mixture.
  4. Place the coated chicken on a baking sheet and bake for 25-30 minutes or until golden brown and cooked through.
  5. In a saucepan, heat heavy cream and lemon juice until simmering and slightly thickened.
  6. Serve the chicken hot with the lemon sauce drizzled on top and garnish with parsley.

Notes

For extra crispiness, broil the chicken for the last 2-3 minutes. You can substitute pecorino cheese with parmesan or other cheeses if desired.
