Ingredients

- 1 cup rolled oats
- 1/2 cup peanut butter
- 1/2 cup honey
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
- 1/4 cup shredded coconut (optional)
Instructions
- In a mixing bowl, combine rolled oats, peanut butter, honey, lemon juice, lemon zest, and vanilla extract.
- Mix until all ingredients are well combined.
- Stir in shredded coconut if using.
- Drop spoonfuls of the mixture onto parchment paper and shape into cookies.
- Refrigerate for at least 30 minutes to set before serving.
