Description

Delicious and easy no-bake cookies made with oats and bright lemon flavor.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/2 cup honey
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 cup shredded coconut (optional)

Instructions

  1. In a mixing bowl, combine rolled oats, peanut butter, honey, lemon juice, lemon zest, and vanilla extract.
  2. Mix until all ingredients are well combined.
  3. Stir in shredded coconut if using.
  4. Drop spoonfuls of the mixture onto parchment paper and shape into cookies.
  5. Refrigerate for at least 30 minutes to set before serving.
