A delicious Lemon Herb Roasted Chicken paired with crispy potatoes, perfect for weeknight dinners or impressing guests.
Ingredients

- 1 whole chicken (about 3–4 pounds; organic preferred)
- 4 medium potatoes, cut into wedges
- 2 lemons, juiced and zested
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Mix lemon juice, zest, olive oil, garlic, herbs, salt, and pepper in a bowl.
- Rub the marinade over the chicken, including under the skin.
- Place chicken in a roasting pan; surround with potatoes and drizzle with remaining marinade.
- Roast for 1 hour and 15 minutes or until the chicken is done.
- Let the chicken rest before carving. Serve and enjoy!
Notes
For extra flavor, stuff aromatics inside the chicken and baste halfway through cooking for tender, juicy results.
