Description

A delicious Lemon Herb Roasted Chicken paired with crispy potatoes, perfect for weeknight dinners or impressing guests.


Ingredients

  • 1 whole chicken (about 34 pounds; organic preferred)
  • 4 medium potatoes, cut into wedges
  • 2 lemons, juiced and zested
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix lemon juice, zest, olive oil, garlic, herbs, salt, and pepper in a bowl.
  3. Rub the marinade over the chicken, including under the skin.
  4. Place chicken in a roasting pan; surround with potatoes and drizzle with remaining marinade.
  5. Roast for 1 hour and 15 minutes or until the chicken is done.
  6. Let the chicken rest before carving. Serve and enjoy!

Notes

For extra flavor, stuff aromatics inside the chicken and baste halfway through cooking for tender, juicy results.
