- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Prep your ingredients and preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, and salt. In another bowl, cream together butter, brown sugar, and granulated sugar. Beat in egg and vanilla, then blend in dry ingredients. Press into a greased baking pan.
- In another bowl, beat cream cheese with sugar, add eggs and vanilla, and blend until smooth.
- Pour cheesecake mixture over the cookie base and bake for 25-30 minutes or until the center is set. Cool completely before slicing.
