Description

A quick and easy keto-friendly taco casserole made with cauliflower rice, lean ground beef, and plenty of cheese.


Ingredients

  • 1 lb lean ground beef
  • 1 cup cauliflower rice
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef, draining any excess fat.
  3. Stir in the onions and bell peppers, sautéing until softened.
  4. Add taco seasoning, diced tomatoes, and cauliflower rice, mixing thoroughly.
  5. In a baking dish, layer half the mixture and sprinkle with half the cheese. Repeat.
  6. Bake uncovered for 25-30 minutes until cheese is bubbling and golden.
  7. Let it sit for 5 minutes before serving.
