- 1 lb lean ground beef
- 1 cup cauliflower rice
- 1 cup diced tomatoes
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef, draining any excess fat.
- Stir in the onions and bell peppers, sautéing until softened.
- Add taco seasoning, diced tomatoes, and cauliflower rice, mixing thoroughly.
- In a baking dish, layer half the mixture and sprinkle with half the cheese. Repeat.
- Bake uncovered for 25-30 minutes until cheese is bubbling and golden.
- Let it sit for 5 minutes before serving.
Notes
Great for making ahead and freezing for later. Customize with your favorite toppings like avocado or sour cream.
