Ingredients

  • 4 medium zucchinis, spiralized
  • 1 lb Kiolbassa sausage, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchinis and pat them dry to remove moisture.
  2. Heat olive oil in a skillet over medium heat. Sear the sausage slices for 2-3 minutes on each side until browned.
  3. Add garlic and sauté for 30 seconds until fragrant.

  5. Fold in spinach and sun-dried tomatoes, simmering until spinach wilts.
