- 1 lb shrimp (peeled and deveined)
- 1 can (13 oz) full-fat coconut milk
- 4 cloves garlic (minced)
- 1 red bell pepper (chopped)
- 1 onion (chopped)
- 2 tbsp lime juice (freshly squeezed)
- ½ tsp chili flakes (adjust to taste)
- Fresh cilantro (for garnish)
Instructions
- Prepare Your Ingredients: Gather and measure all ingredients. Chop the onion and red bell pepper finely, and mince the garlic.
- Sauté Aromatics: In a large skillet, heat 1 tbsp oil over medium heat. Add chopped onions and bell peppers, cooking until soft, about 5 minutes.
- Add Garlic & Spices: Stir in minced garlic and chili flakes; sauté for about 1 minute until fragrant.
- Pour in Coconut Milk: Add coconut milk to the skillet, stirring until combined with vegetables; simmer for 3-5 minutes.
- Add Shrimp & Lime Juice: Gently add shrimp and lime juice, cooking until shrimp is pink and opaque, roughly 3-4 minutes.
- Garnish & Serve: Remove from heat and sprinkle fresh cilantro on top before serving over rice or noodles.
