Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 cups egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion, sliced carrots, and celery; sauté until softened, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Pour in chicken broth and add shredded chicken, thyme, and bay leaf; bring to a boil.
- Add egg noodles and cook according to package instructions until al dente, about 8-10 minutes.
- Season with salt and pepper to taste. Remove bay leaf before serving. Garnish with fresh parsley.
