Description

A comforting Homemade Chicken Noodle Soup that’s quick to prepare, perfect for chilly days and family gatherings.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, sliced carrots, and celery; sauté until softened, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Pour in chicken broth and add shredded chicken, thyme, and bay leaf; bring to a boil.
  4. Add egg noodles and cook according to package instructions until al dente, about 8-10 minutes.
  5. Season with salt and pepper to taste. Remove bay leaf before serving. Garnish with fresh parsley.
