- 1 pound ground hamburger
- 4 large potatoes, diced
- 1 onion, chopped
- 3 carrots, sliced
- 4 cups beef broth
- 1 cup shredded cheddar cheese
- 1 cup milk or cream
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and ground hamburger; cook until the meat is browned.
- Stir in potatoes and carrots, and cook for a few minutes.
- Pour in beef broth and bring to a boil.
- Reduce heat and let simmer until potatoes and carrots are tender (about 20 minutes).
- Stir in milk or cream and cheddar cheese until melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions if desired.
Notes
For a lighter version, you can substitute the ground hamburger with ground turkey or chicken and the milk with almond or coconut milk.
