Ingredients

Scale
  • 1 cup lentils
  • 4 cups vegetable or chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup chopped kale or spinach
  • 4 strips bacon, cooked and crumbled
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until soft.
  2. Stir in garlic and thyme; sauté for another minute.
  3. Add lentils, broth, diced tomatoes, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 30 minutes until lentils are tender.
  5. Stir in greens and crumbled bacon; cook for an additional 5 minutes.
  6. Taste and adjust seasoning if needed.
  7. Serve warm, garnished with additional bacon if desired.
