Ingredients

- 1 cup lentils
- 4 cups vegetable or chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup chopped kale or spinach
- 4 strips bacon, cooked and crumbled
- 1 teaspoon thyme
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until soft.
- Stir in garlic and thyme; sauté for another minute.
- Add lentils, broth, diced tomatoes, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30 minutes until lentils are tender.
- Stir in greens and crumbled bacon; cook for an additional 5 minutes.
- Taste and adjust seasoning if needed.
- Serve warm, garnished with additional bacon if desired.
