Description

A delicious and hearty vegetable lasagna loaded with fresh vegetables and creamy cheese layers.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. In a large mixing bowl, combine ricotta cheese, Italian seasoning, salt, and pepper.
  4. Layer 1/3 of the marinara sauce on the bottom of a baking dish.
  5. Add 3 lasagna noodles, followed by half of the ricotta mixture and half of the vegetables.
  6. Sprinkle 1/3 of the mozzarella cheese on top.
  7. Repeat the layering process, finishing with noodles and remaining marinara sauce.
  8. Top with remaining mozzarella and Parmesan cheese.
  9. Bake for 40-45 minutes, or until bubbly and golden.
  10. Let sit for 10 minutes before slicing and serving.

Notes

Feel free to add any of your favorite vegetables to the layers.
