- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 inch fresh ginger, grated
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon miso paste (optional)
- Rice noodles, cooked
- Chopped green onions, for garnish
- Fresh cilantro, for garnish
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add garlic and ginger, sautéing until fragrant (about 2 minutes).
- Add vegetable broth, soy sauce, and miso paste (if using) to the pot. Bring to a simmer.
- Cook rice noodles according to package instructions.
- Once the broth is simmering, taste and season with salt and pepper.
- In bowls, add cooked rice noodles and ladle the ginger garlic broth over them.
- Garnish with chopped green onions and fresh cilantro. Serve hot.
