Description

A rich and creamy Gingerbread Cheesecake that combines the classic flavors of gingerbread with a luscious cheesecake texture, perfect for holiday celebrations.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup dark brown sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup molasses
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp ground allspice
  • 1 cup heavy whipping cream

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare your tools.
  2. In a bowl, combine graham cracker crumbs, dark brown sugar, and melted butter. Press into the bottom of a greased 9-inch springform pan.
  3. Beat softened cream cheese until fluffy. Gradually add in sugar, eggs, dark brown sugar, molasses, and spices. Mix until smooth.
  4. Pour the filling over the crust and bake in a water bath for 85 minutes, until slightly jiggly in the center.
  5. Cool at room temperature, then refrigerate for at least 6 hours or overnight.
  6. Prepare cream cheese frosting while cooling, using powdered sugar and softened cream cheese.
  7. Frost the cheesecake and decorate as desired before serving.

Notes

Use high-quality vanilla extract for the frosting. Adjust spices to taste. Bake in a water bath to prevent cracks.
