- 1 ½ cups graham cracker crumbs
- ½ cup dark brown sugar
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- ¼ cup molasses
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground nutmeg
- ½ tsp ground allspice
- 1 cup heavy whipping cream
Instructions
- Preheat your oven to 325°F (163°C) and prepare your tools.
- In a bowl, combine graham cracker crumbs, dark brown sugar, and melted butter. Press into the bottom of a greased 9-inch springform pan.
- Beat softened cream cheese until fluffy. Gradually add in sugar, eggs, dark brown sugar, molasses, and spices. Mix until smooth.
- Pour the filling over the crust and bake in a water bath for 85 minutes, until slightly jiggly in the center.
- Cool at room temperature, then refrigerate for at least 6 hours or overnight.
- Prepare cream cheese frosting while cooling, using powdered sugar and softened cream cheese.
- Frost the cheesecake and decorate as desired before serving.
Notes
Use high-quality vanilla extract for the frosting. Adjust spices to taste. Bake in a water bath to prevent cracks.
