Description

A quick and easy Garlic Roasted Chicken and Potatoes recipe that combines juicy chicken thighs, tender potatoes, and the delightful aroma of garlic and rosemary, all in about 45 minutes.

Ingredients

Scale
  • 4 chicken thighs
  • 4 medium potatoes, cut into wedges
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix chicken thighs with olive oil, garlic, rosemary, salt, and pepper.
  3. Add potatoes, toss until coated.
  4. Spread on a baking sheet.
  5. Roast for 40-45 minutes until chicken is cooked and potatoes are golden.
  6. Serve with lemon wedges.

Notes

Allow chicken to sit at room temperature for about 15 minutes before roasting for even cooking. For extra crispiness, consider broiling for 3-5 minutes after roasting.
