An easy, savory dish combining succulent chicken and baby potatoes in a garlic Parmesan sauce, perfect for busy nights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients by washing and halving the baby potatoes.
  2. Season the chicken with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes.
  3. Layer the halved potatoes at the bottom of the crockpot and place the seasoned chicken on top.
  4. Pour the chicken broth over the chicken and potatoes.
  5. Sprinkle minced garlic and grated Parmesan cheese on top.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  7. Check for chicken doneness at 165°F (75°C) and ensure the potatoes are fork-tender.
  8. Serve and garnish with fresh parsley if desired.

Notes

For a dairy-free option, substitute Parmesan cheese with nutritional yeast.
