A quick and delicious garlic mushroom bok choy stir-fry that is healthy and packed with flavor.

- 2 cups bok choy, cleaned and chopped
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- Sesame seeds (optional, for garnish)
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant, about 30 seconds.
- Add sliced mushrooms and cook until they start to soften, about 3-4 minutes.
- Add chopped bok choy and stir-fry for another 2-3 minutes until wilted.
- Drizzle with soy sauce, and season with salt and pepper to taste.
- Stir well and cook for an additional minute.
- Serve hot, garnished with sesame seeds.
Notes
For a touch of crunch, add some cashews or water chestnuts in the stir-fry. Serve over rice or noodles for a complete meal.
