- 100 g (1/2 cup) granulated sugar
- 1 large egg (50 g), room temperature
- 10 ml (2 tsp) vanilla extract
- 90 g (3/4 cup) rainbow sanding sprinkles
- Optional: 15 g (2 tbsp) cornstarch
Instructions
- Preheat the oven to 175°C (350°F) and line two baking sheets with parchment.
- Whisk together flour, baking soda, and salt in a bowl.
- Cream butter, brown sugar, and granulated sugar in a mixer until fluffy.
- Add egg and vanilla to the mixture, combining well.
- Add dry ingredients and mix until just combined.
- Fold in most of the sprinkles, reserving some for topping.
- Chill the dough for 30 minutes.
- Scoop the dough onto baking sheets and press reserved sprinkles on top.
- Bake for 9-11 minutes until edges are golden.
- Cool on baking sheets before transferring to a rack.
