Description

A comforting French Onion Mushroom Pot Roast that’s tender, savory, and perfect for family gatherings.


Ingredients

  • 3 to 4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 packet French onion soup mix
  • Salt and pepper to taste
  • Fresh thyme (optional)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Season the beef roast with salt and pepper, then sear in olive oil until browned on all sides.
  3. Remove the roast, sauté onions and mushrooms until softened.
  4. Mix in beef broth and soup mix, then return the roast to the pot.
  5. Cover and bake for 3-4 hours until the meat is tender.
  6. Serve hot, garnished with thyme if desired.

Notes

For enhanced flavor, add garlic powder, paprika, or bay leaves. You can also incorporate seasonal vegetables like carrots or potatoes.
