Ingredients

- 3 to 4 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 large onion, sliced
- 8 ounces mushrooms, sliced
- 1 cup beef broth
- 1 packet French onion soup mix
- Salt and pepper to taste
- Fresh thyme (optional)
Instructions
- Preheat your oven to 325°F (165°C).
- Season the beef roast with salt and pepper, then sear in olive oil until browned on all sides.
- Remove the roast, sauté onions and mushrooms until softened.
- Mix in beef broth and soup mix, then return the roast to the pot.
- Cover and bake for 3-4 hours until the meat is tender.
- Serve hot, garnished with thyme if desired.
Notes
For enhanced flavor, add garlic powder, paprika, or bay leaves. You can also incorporate seasonal vegetables like carrots or potatoes.
