Description

A savory and hearty stew made with tender beef, sweet caramelized onions, and topped with melted Gruyère cheese on crispy baguette.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 cups shredded Gruyère cheese
  • 1 French baguette, sliced

Instructions

  1. Prep your ingredients by dicing onions and mincing garlic.
  2. In a large pot, brown the beef cubes over medium-high heat, then set aside.
  3. Caramelize the onions in the same pot until golden.
  4. Add minced garlic and cook for another minute.
  5. Return the beef to the pot and add beef broth, red wine, Worcestershire sauce, bay leaf, thyme, salt, and pepper. Bring to a simmer.
  6. Let the stew simmer for 1.5 hours, stirring occasionally.
  7. While the stew simmers, preheat your oven to 350°F (175°C).
  8. Arrange sliced baguette on a baking sheet and top with Gruyère cheese.
  9. Bake until the cheese is melted and bubbly, about 15 minutes.
  10. Serve the stew hot, topped with cheesy bread.

Notes

For best flavor, use aged Gruyère cheese and avoid sweet red wines.
