- 2 lbs beef chuck, cut into cubes
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons Worcestershire sauce
- 1 bay leaf
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 cups shredded Gruyère cheese
- 1 French baguette, sliced
Instructions
- Prep your ingredients by dicing onions and mincing garlic.
- In a large pot, brown the beef cubes over medium-high heat, then set aside.
- Caramelize the onions in the same pot until golden.
- Add minced garlic and cook for another minute.
- Return the beef to the pot and add beef broth, red wine, Worcestershire sauce, bay leaf, thyme, salt, and pepper. Bring to a simmer.
- Let the stew simmer for 1.5 hours, stirring occasionally.
- While the stew simmers, preheat your oven to 350°F (175°C).
- Arrange sliced baguette on a baking sheet and top with Gruyère cheese.
- Bake until the cheese is melted and bubbly, about 15 minutes.
- Serve the stew hot, topped with cheesy bread.
Notes
For best flavor, use aged Gruyère cheese and avoid sweet red wines.
