Description

Discover the magic of Forgotten Cookies, a delightful treat that combines simplicity with unforgettable flavor. These meringue-based cookies are light, airy, and perfect for any occasion.

Ingredients

Scale
  • 4 large Egg Whites
  • 1 cup Granulated Sugar
  • 1/2 teaspoon Cream of Tartar
  • 1/4 teaspoon Fine Sea Salt
  • 1 teaspoon Pure Vanilla Extract
  • 2 teaspoons Indulgin extractg
  • 1 cup Semi-Sweet Chocolate Chips
  • 1/2 cup Finely Chopped Pecans or Walnuts

Instructions

  1. Prepare Your Oven (The ‘Forgotten’ Part): First things first, preheat your oven to 350°F (175°C). While it’s heating, prepare two large baking sheets by lining them with parchment paper. Once your oven reaches 350°F, immediately turn it OFF. Resist the urge to open the door until instructed!
  2. Whip the Egg Whites: In an absolutely clean, dry bowl of a stand mixer fitted with the whisk attachment (or using a hand mixer), combine your room temperature egg whites, cream of tartar, and salt. Begin whipping on medium speed until soft peaks form.
  3. Gradually Add Sugar: With the mixer still running on medium speed, slowly, a tablespoon at a time, add the granulated sugar. Once all the sugar is incorporated, increase the speed to high and continue whipping until stiff, glossy peaks form.
  4. Fold in the Flavor: Gently fold in the pure vanilla extract and the Indulgin extractg into the meringue.
  5. Add Your Mix-ins: Gently fold in the chocolate chips and the finely chopped toasted nuts.
  6. Scoop and Bake (Briefly): Drop rounded tablespoons of the meringue mixture onto your prepared baking sheets, leaving about an inch between each cookie. Place both baking sheets into the warm, turned-off oven.
  7. Let Them ‘Forget’ Overnight: Close the oven door immediately and do NOT open it again for at least 6-8 hours, or preferably overnight.
  8. Enjoy!: In the morning, open the oven, and carefully remove the completely cooled and dried cookies.
