- 1 lb chicken breast
- 2 tablespoons red curry paste
- 1 can coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 red bell pepper, cut into squares
- 1 green bell pepper, cut into squares
- 1 onion, cut into squares
- Wooden or metal skewers
Instructions
- Prep your ingredients: Cut chicken into bite-sized pieces and dice bell peppers and onion.
- Marinate the chicken: In a bowl, mix red curry paste, coconut milk, fish sauce, brown sugar, and lime juice. Add chicken and coat well. Let marinate for at least 30 minutes.
- Prepare the grill: Preheat your grill to medium-high heat.
- Assemble the kebabs: Thread marinated chicken pieces onto skewers, alternating with bell peppers and onion.
- Grill the kebabs: Cook on the grill for 10-12 minutes, turning occasionally until the chicken is cooked through (internal temperature of 165°F).
- Serve hot, drizzling with remaining marinade or your favorite dipping sauce.
Notes
Ensure even cooking by leaving space between pieces on the skewer. Marinate overnight for deeper flavor.
