Irresistibly delicious Thai curry chicken kebabs made in just 30 minutes with a rich coconut curry marinade.


Ingredients

  • 1 lb chicken breast
  • 2 tablespoons red curry paste
  • 1 can coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 red bell pepper, cut into squares
  • 1 green bell pepper, cut into squares
  • 1 onion, cut into squares
  • Wooden or metal skewers

Instructions

  1. Prep your ingredients: Cut chicken into bite-sized pieces and dice bell peppers and onion.
  2. Marinate the chicken: In a bowl, mix red curry paste, coconut milk, fish sauce, brown sugar, and lime juice. Add chicken and coat well. Let marinate for at least 30 minutes.
  3. Prepare the grill: Preheat your grill to medium-high heat.
  4. Assemble the kebabs: Thread marinated chicken pieces onto skewers, alternating with bell peppers and onion.
  5. Grill the kebabs: Cook on the grill for 10-12 minutes, turning occasionally until the chicken is cooked through (internal temperature of 165°F).
  6. Serve hot, drizzling with remaining marinade or your favorite dipping sauce.

Notes

Ensure even cooking by leaving space between pieces on the skewer. Marinate overnight for deeper flavor.
