Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 3 eggs
  • 2 cups mixed dried fruits
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Zest of 1 lemon
  • 1/2 cup apricot jam
  • Marzipan and fondant for decoration (optional)

Instructions

  1. Prepare the mixed dried fruits by chopping them into smaller pieces and soaking them in warm water or tea for extra moisture (10 minutes).
  2. Preheat the oven to 175°C (350°F) (5 minutes).
  3. Cream together the butter and sugar until fluffy, then add the eggs one at a time (15 minutes).
  4. Fold in the flour, cinnamon, nutmeg, and lemon zest until just combined (5 minutes).
  5. Spread the batter in a prepared 9×13 inch baking tray and bake for 20-30 minutes or until a toothpick comes out clean.
  6. Once baked, brush the top with apricot jam while still warm (5 minutes).
  7. Cover with rolled-out marzipan (15 minutes).
  8. If using, cover with fondant for a smoother finish and decorate as desired (30 minutes).
  9. Slice and serve your lovely traybake (5 minutes).
