Description

Quick, healthy no-bake power balls made from dates, oats, and nut butter, perfect for snacks or pre-workout energy.


Ingredients

Scale
  • 1 cup Medjool dates, pitted
  • 1 cup rolled oats
  • 1/2 cup peanut butter (or other nut butter)
  • 2 tablespoons honey (or maple syrup for vegan option)
  • 1 tablespoon ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional mix-ins: chocolate chips, nuts, seeds, dried fruit, or spices

Instructions

  1. Check and prep dates by inspecting for pits and soaking if necessary.
  2. Add dates to a food processor and pulse until a sticky ball forms. Add oats, nut butter, honey, flaxseed, vanilla, and salt. Process until the mixture holds together.
  3. Pulse in optional mix-ins until distributed.
  4. Adjust consistency if needed by adding oats or nut butter.
  5. Use a cookie scoop to portion, roll into balls, and place them on a parchment-lined plate.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

These bites can be stored in an airtight container in the fridge for up to two weeks or frozen for up to three months.
